Baked Tacos

This is one of those recipes where you can’t really believe YOU didn’t think of it before. It’s simple, easy, and incredibly tasty. And for leftovers, if you microwave them with a moist paper towel…oh man. Good stuff. Yes. The picture above is from the actual website. I didn’t remember to take photos myself. The link is at the bottom of the page! Also, I adjusted this recipe for 2 people and had about 4 leftover.

Makes: 9 tacos

Need:

1 lb ground beef

1/2 can refried beans (I used the other half as a side)

8 ounce tomato sauce

1/2 pkg taco seasoning

Shredded cheese (I didn’t measure)

9 tortillas (I used corn)

No-stick spray

Any other taco toppings you’d like (I used salsa and made some guacamole)

How To:

1. Preheat oven to 375

2. Microwave tortillas in a moist paper towel for about 30 seconds.

3. Spray both sides of the tortilla with the no-stick spray.

4. Drape the tortillas over 2 bars of the oven rack.

5. Bake for 7-10 minutes or until crispy (pictured). And while your tortillas are cooking, proceed to step 6.

6. Brown the ground beef. By this time your shells are probably ready if you haven’t checked on them yet…Also, time to turn up the heat in your oven to 400.

7. Add refried beans, tomato sauce, and seasoning. Incorporate and let simmer for a couple minutes.

8. Lightly grease a casserole dish.

9. Put the shells into the dish; fit them however you can.

10. Scoop in the filling and top with shredded cheese.

11. Bake for 10-12 minutes or until heated through/cheese is melted.

12. Let cool for a minute or two. Trust me on this.

13. Top and serve!
